Bikini Recipe

Serves 10 people

Ingredients for the Clementine Syrup (produces 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar

For the Premix (produces 850ml, enough for 10)

400ml decent vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
A few cranberries, to garnish
Mandarin essential oil, for finishing

Method

To prepare the Citrus Syrup: Combine the listed items into a saucepan, heat until it reaches a simmer, stirring so the sugar melts. Then, remove from the burner allowing it to reach room temperature completely. Transfer into a sterilised bottle, close it and refrigerate it in the refrigerator, it can be stored for about one month.

For the Cocktail Base: Combine every spirits and syrup into one big jug, let it rest for one hour, then filter it best through muslin, so it's completely strained.

To serve: Measure 85ml from the cocktail base to a mixing glass containing ice, and agitate lightly for about 60 seconds to cool it down. Strain into a cold coupe glass or similar, top with a few cranberries and complete it by giving it a brief mist of mandarin oil above the glass.
